A Kitchen Story

There are many perks to working in the kitchen at Heartland Center. You have a 320-acre backyard, camaraderie, delicious food and a fearless leader in kitchen manager and chef Nicole Baker.
Nicole has a talent for knowing what people enjoy most--who favors the pork pot roast and roasted potatoes, who prefers the barbecue chicken and who binges on the s'more cookies. Visitors are sometimes surprised at the quality and variety of foods offered at Heartland Center retreats and events.
Good communication is essential when managing the kitchen. Things can get hectic; cooking for groups is, of course, more complicated than cooking at home. Clear expectations and attention to workflow help facilitate the work. Nicole says, "It's all about saying what you need and when... we're not mind readers!" Nicole loves training the interns who assist her, watching them overcome hesitations and grow to love the work.

Assemble the following ingredients:

--2 sticks butter (room temperature) --1 1/2 cups flour
--2 cups brown sugar --1 tsp baking soda
--2 tsp vanilla extract --1/2 tsp salt
--2 eggs --2 cups mini-chocolate chips
--3 cups graham cracker crumbs --mini-marshmallows

Cream butter and brown sugar together, then add vanilla and eggs. In a separate bowl, mix dry ingredients: graham cracker crumbs, flour, baking soda, and salt. Combine ingredients from both bowls, then stir in chocolate chips. Spoon cookie dough onto baking sheet.
Bake at 350 degrees F for 3 minutes. Then top with mini-marshmallows, 3 per cookie, and return to oven for another 5 minutes. Watch closely to prevent over-baking.

In the beginning, the Heartland Presbyterian Center was managed by a committee of Heartland Presbytery. The group's primary focus was on programs and hands-on participation of volunteers in the camping program.
In 1987, a task force was established to evaluate camp operations. Out of that task force came a recommendation to establish a separate organizational structure. In November 1988, Presbytery elected the Center's first Board of Directors. In 1992, the Heartland Presbyterian Center became a separate, incorporated entity. At that time, the Executive Director position was established. This person is primarily responsible for annual operations and fund raising. The positions of Program Director and Food Service Director were also instituted, to provide oversight of those activities.
Operations continue to evolve as Heartland Center seeks to fulfill its mission. Recent additions to the staff have been an Associate Executive Director, Marketing Director and a Day Camp Director. We ask for your continued prayers and support as we faithfully serve campers and retreat participants, providing them with a beautiful campus and meaningful programming.
